We offer malt Distillery for producing Whisky the traditional Scottish way.

  1. Storage: The malt is transported to the distillery and stored in silos.
  2. Mashing: The malt is ground in specialized roller mills (4 roll or 6 roll) to make ‘grist’ which is then soaked in hot filtered water in a lauter tun. Starch in the malt is converted to sugars and this sweet syrup called ‘wort’ is ready for fermentation.
  3. Fermentation: Yeast is added to the cold wort to begin the fermentation which can last from 3 days to a week depending on the desired profile of spirit. The fermented wort, now known as ‘wash’ or ‘beer’ containing 6 to 8% v/v alcohol is ready for the next step.
  4. Distillation: Based on the tradition, the wash is distilled twice. The first distillation separates the flavours, alcohols, esters, and other ingredients from the wash to produce ‘low wines’. A second distillation purifies and concentrates the low wines to produce the ‘middle cut’ which is the new make spirit.
  5. Aging: The middle cut is aged in wooden casks depending on the maturation plan followed by the distillery. The aging process can last for several years and significantly influences the flavour of the whisky.
  6. Bottling: finally, the whisky is bottled and ready for consumption.
